In an autoclave, the product is sterilized in an environment of saturated steam, which is injected into between the baskets. Condensate accumulates at the bottom of the autoclave and is regularly discharged or used at the beginning of cooling. Heating of the stacked product on the trays is done by steam (circulation forced by a fan)
